Peruvian Potato Dishes
My other must-have starter — papas a la huancaina — are potatoes in a creamy queso fresco and yellow chile sauce. I have no objections to potato dishes prepared with mayonnaise, and many Peruvian potato dishes use mayonnaise along with Peruvian-style add-ins such as avocado, lime juice, and black olives. But once I tasted a Peruvian causa with real queso fresco, I became a fan. Queso fresco, which is similar to Greek feta or Indian paneer cheese, is easy to obtain in most U.S. supermarkets.
